Summer Fruit Smoothie Recipe

It’s still summer, right? Sometimes I’m not so sure around here.

The Little Man starts school in just a week. I don’t know the reasoning.

It’s foggy here almost all of June and July. It’s actually somewhat sunny today. And a balmy 73 F.

Anyway, the reason I ask is because I love summer fruit. In fact, that’s about all I eat during the summer is fruit. I can’t get enough of it.

Peaches, nectarines, strawberries, raspberries, apricots, plums, etc.

So, since I am still living off of mostly smoothies, I decided I wanted to make one that makes me think of summer. The one I seem to be missing.

At least living in California, I still get all of the great summer fruit at my farmers’ market.

This summer fruit smoothie is a wonderful treat filled with lots of summer fruit. In fact, it’s more like a shake than a smoothie.

The nice thing is that you are still getting lots of great nutrition with all of the vitamins in the fruit.

I use all frozen fruit to give it that shake thickness. For frozen bananas, I just take bananas that are getting a bit old in my fruit basket, peel them, brake them in half and throw them in a ziplock freezer bag. Then I always have them around when I need them.

Everything else you can either buy frozen ones in your store, or freeze the fresh ones ahead of time. OR…

If you don’t want to freeze any fruit, just use fresh and some ice. Enjoy!

Ingredients

  • 1 Peach (cut up and frozen)
  • 1 cup Strawberries (frozen)
  • 1 cup Pineapple (frozen)
  • 1 Banana (frozen)
  • 1 cup Coconut Milk

Instructions

  1. Add all ingredients to your blender and blend.
  2. I use a Blendtec, so if not using a high speed blender, chop ingredients a bit more before you blend.

      Thanks, Shirley! Since I am so limited on my food, right now, it is nice to have a “milk” shake to drink when I want something sweet.
