Chocolate Mint Brownies (Gluten Free, Dairy Free, Vegan)

Ingredients

  • 3 Flax Eggs
  • 1/2 cup Coconut Butter
  • 1/2 cup Chocolate Chips
  • 1 tsp Vanilla Extract
  • 2 tsp Peppermint Extract
  • 1/2 cup Rice Flour
  • 1 cup Almond Flour
  • 1/2 cup granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 tsp Salt
  • 1 tsp Baking Powder
  • 1/4 cup Cocoa Powder

Instructions

  1. Make flax eggs. (Check this post for how to make a flax egg.)
  2. Preheat oven to 350F degrees.
  3. Lightly spray an 8 x 8 inch pan.
  4. Melt coconut butter and chocolate chips together with vanilla extract and peppermint extract.
  5. Mix remaining ingredients in a large bowl.
  6. Add flax eggs and melted mixture and mix some more.
  7. Pour mixture into pan.
  8. Bake for 25 – 28 minutes. Check with toothpick for doneness.
